@airfryergirluk shares her tasty recipe for matcha Victoria sponge cakes
Ingredients
- Makes 4 small cakes
- 200g caster sugar
- 200g unsalted butter
- 4 eggs
- 200g self-raising flour
- ½ teaspoon matcha powder
- Jam
- Clotted cream
- Strawberries
- Icing sugar (optional)
Method
- Add the caster sugar and unsalted butter to a bowl, then cream until smooth
- Mix in 4 eggs
- Sieve self-raising flour into the mixture, then sieve your matcha powder and give everything a good mix until smooth
- Equally split the mixture into 4x4 silicone moulds. Using the back of a spoon, smooth each mould so the mixture is level
- Pop them in the air fryer. Use bake mode on 160°C for 20 to 25 minutes – check on your bakes with a metal skewer to see if they’re baked
- When ready, take the bakes out of the air fryer and leave to cooldown
- Slice each cake evenly in half length ways, then add a dollop of jam to the bottom half followed by some clotted cream
- Thinly slice some strawberries and pop them on top of the clotted cream
- Add the top of the cake onto the bottom, to make a sandwich
- To decorate, add a dollop of cream to the top of the sandwich, add some strawberries and sprinkle with icing sugar
- Repeat steps 7 to 9 for each cake
